My Shopping Trip for 1/21

I made a trip to CVS & Walgreens yesterday. I spend a bit more then normal out of pocket but really got stocked up on a few items. Here is the breakdown-

Total Retail Cost- $78.08
Used $18.73 in coupons
Used $2.90 in CVS gift card
Used $5 in Balance Rewards
Paid- $51.45

I also have $3 in Register Rewards and $10 CVS gift card remaining.

I ended up spending $3 on inserts and $3 on Clipped Coupons this week.  So far this year I have spent $77.92 in coupon shopping and $15.50 on coupons. I also cashed in $14 from Ibotta & 10.34 from Endorse.

I went to Dollar Tree yesterday to use the last of my Advil PM & Nivea coupons. While there I also picked up some FREE Planters peanut butter.

Kids Day Tomorrow at Rockford IceHog’s Game! (1/21)

We decided to take the kids to another Rockford IceHog’s hockey game tomorrow at the BMO Harris Bank Center for Kid’s Day! Rockford IceHogs take on the Texas Stars at 1:05 p.m. in their only home afternoon game of the season.

All kids can get $5 tickets (18 and under) to the game and take advantage of special Kidcession-items, including one dollar hot dogs and soft drinks. The first 1,000 kids (14 and under) to the game on Monday will receive an IceHogs drawstring bag compliments of Hog Wash.

All fans are encouraged to bring their ice skates to the game as they will be invited onto the BMO Harris Bank Center ice following the game to Skate with the Hogs. Only fans with skates will be permitted onto the ice. The glass will be removed from the north end zone to allow fans without skates to get autographs from the players.

In honor of Martin Luther King Jr. Day, the IceHogs will recognize black history in professional hockey and throughout IceHogs history. West Middle School choir will perform the national anthem and Maceo Rainey, West Middle School’s principal and one of Rockford’s most influential African-American leaders, will drop the ceremonial first puck.

Zesty Italian Chicken Spaghetti Recipe

As a stay-at-home mother of three, whose family is definitely on a budget, I look for every possibility to save money.  Dinners are number one in this area.  I like to play with ingredients that I usually have sitting around and just see what I can come up with.  Sometimes it’s amazing.  Sometimes it’s just better to never speak of it again.  Example:  pork chops and peaches are not such a great combination.  I found this out the hard way.  Let’s just say, even my family never saw, let alone, tasted this one.

A few have stuck around, though, and have been some of our favorites for many years.  One that I am particularly fond of, and even get requests for, is what I call Zesty Italian Chicken Spaghetti.  It’s fairly quick and definitely simple.

Here’s what you’ll need:

  • 4 boneless, skinless chicken breasts, thawed  (or 8 of the chicken tenders)
  • 1 bottle of Zesty Italian Salad Dressing
  • 1 small box of spaghetti (cooked according to package directions)
  • 1 stick of butter (or more if you prefer)
  • Garlic powder
  • Italian Seasoning
  • Grated Parmesan Cheese

To start, cut chicken into ½ inch strips.  Place Chicken into medium size bowl and pour in enough dressing to cover chicken well.  You need to marinate for at least one hour.  You can definitely do longer.  I usually put mine in overnight, and that just helps me to skip a step the next day.

When chicken is fully marinated, begin heating oil in a sauté pan on the stove top on medium heat.  I’ve used both vegetable and olive.  It’s really personal preference.  When oil is heated, add chicken and begin to sauté until no longer pink in the center. This is also a good time to start your spaghetti.  When both are done, toss together in a large bowl.

Place butter in small sauce pan on low to medium heat.  Sprinkle in garlic powder (at least 1-2 teaspoons).  Again, this comes down to personal preference.  Some prefer more, some less.  Remember, though, you can always add more, but you can’t take any out.  Add just a couple shakes of Italian seasoning and stir until butter is good and melted.  It should smell amazing at this point!  Pour butter mixture over the tossed chicken and spaghetti and toss some more to make sure it is covered well.  Serve garlic bread, top with Parmesan cheese, and enjoy!!!
